They'll work. If you wait a few days they'll be even sweeter, though, because starches convert to sugars as they ripen.
Or, if you don't want to wait, bake them, IN their skins, at 350 F for 10 minutes. That speeds up the sugar conversion process. Cool a few minutes, peel, then mash. |

Oh yeah, they're perfect. You don't want them too brown. They do go rotten at a point. However, you might need more than three. Most recipes call for four per loaf.

I think they should be ok, but if ever the following site has a delicious and easy to make recipe for banana cake/bread. She also has some hints to quicken the ripening process.
